The winemaking at Burn Cottage reflects biodynamic principles with low intervention. There is no addition of yeast or bacteria for fermentation, sulphur use is minimal and there is no filtration before bottling. The majority of the fruit was fully destemmed with 16% whole clusters. Fermentation of the Pinot Noir grapes lasted for 20 days. The wine was then aged in French barrels from Damy, Mercurey and Sylvain cooperages, 25% of which were new oak.
