Thörle Sekt Blanc de Blancs Brut, Germany 2021
Impressive new wave German wines from this Rheinhessen estate. Thörle is a family domaine based in Saulheim in the Rheinhessen, and since 2006 it has been run by Christoph and his brother Johannes. The vineyards are managed organically, and the domaine is being taken in a biodynamic directionVinificationClassic bottle fermentation. The base wine of our Chardonnay was harvested by hand in early September 2018. After the whole-bunch pressing the must was fermented 100% in traditional French and German oak barrels 500l & 1200l. The wine matured in these barrels after the fermentation untouched, on the full lees until the beginning of August 2019. The second fermentation took place in the cellars of the renowned Sekt manufacturer Raumland in Flörsheim-Dalsheim Rheinhessen. The dosage is 4g. After the second fermentation in the bottle, the wine was left to mature on the yeast for 16 months and shaken by hand before being disgorged in December 2020.
